Ready to try some Ethiopian cuisine?
Pictured to the right, you will see a typical Ethiopian dish. It consists of injera which is a sourdough risen flatbread with a unique, slightly spongy texture. It is made with teff flour, mixed with water, and allowed to ferment for several days. Because of this process, injera has a mildly sour taste. It is baked into large, flat pancakes. Wat, which is the orange mixture in the center is an Ethiopian stew or curry. It can be made with chicken, beef, lamb, a variety of vegetables, and spice mixtures. The meat and sautéed vegetables you see are called tibs. Notice any eating utensils? Look closely - they are there. Ethiopians break off pieces of injera to pick up their food.
